Creativity is a Caramel Brownie…

Today’s creative streak found me making brownies with carmel filling from scratch.  My lovely gentleman friend has been down in the dumps this week (from an old ailing logging injury to his back), so I thought a good way to help cheer him up this weekend would be to bring him one of his favorite things in the entire world: Brownies.

I’ve been trying to make as much as possible from scratch lately – just so I know how to do it.  And this morning I found this super easy recipe for brownies over at Safely Gathered In.  She notes how you can add some Symphony bars in the middle of the batter for an added filling, but I decided to take it one step further and make some homemade caramel sauce and make that the filling.  Ohhhh my.  It smells so good in my house right now!


First I melted a cup of butter


I blended the butter with 2 cups of sugar, a cup and a half of flour and one-third of a cup of cocoa powder. 1 tsp of vanilla and four eggs.  I actually sifted the dry ingredients together first (three times, to make sure it was really blended well).  I don’t know if this will do anything, but it felt like a good idea at the time.


Next I whipped up a quick caramel sauce by melting another stick of butter (holy butter, Batman!), then I whisked in a cup of brown sugar and blended that well, followed that up with two-thirds of a cup of heavy cream – again, blending well, and finished up with 1 tsp of vanilla.


I put half the brownie batter in a greased pie plate, then added a few spoonfuls of caramel and topped it off with the remainder of the brownie batter.


Tossed the whole thang into the oven for 40 minutes on 350 degrees.


And when it was all done, I pulled out a wonderful smelling caramel-brownie pie!


Look at that carmel gooeyness!
